It gets such a bad wrap, but really SPAM can be a good thing.  Especially when it is found in Spam Musubi.  I had read about Spam Musubi before mine and the Husband’s trip to Hawaii a couple of years ago. Spam Musubi is a Hawaii snack that is very similar to sushi.  It is a cooked slice of Spam on top of sushi rice, wrapped in a piece of nori (seaweed).  I became addicted to this tasty treat when we had some in Maui.  While the Husband and I lived in San Francisco, we had Hawaiian restaurants available to us and Spam Musubi whenever the craving struck.  However, here in Blount County I have yet to locate a place that specializes in Hawaiian cuisine.  So I had to take matters into my own hands and make my own Spam Musubi.  May I say that it was tasty!  And I know, Spam is pork, which I am not really allowed to have.  But once every few months isn’t going to kill me, right?
