Since this is the husbands last day in the USA, he made a request for pancakes. I will admit that I am not the best pancake maker in the world. No matter what recipes I use, they always end up, well… less than perfect.

The recipe I started with:
Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg
- 1 cup milk
- 1/4 cup shortening, melted
The Steps:
- In a small bowl, combine the flour, sugar, baking powder and salt. Combine the egg, milk and shortening; stir into dry ingredients just until moistened.
- Pour batter by 1/4 cupful onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown.
However, I can never leave good enough alone. So after making 6 pancakes (since the husband only wanted the unfooled around with version) I added some additional ingredients:
Extras:
- 1/2 banana, mashed with a fork
- 1/2 tsp. coconut extract
- 2 Tbsp. chopped walnuts
After adding them to the mixture, I continued cooking as normal. The results reminded me of fried banana bread. I topped with the other half of the banana, and didn’t need to add syrup!
