Since the husband left on Sunday, I was stuck watching the Super Bowl all by my lonesome. Luckily, my neighbor Erin had no plans for the Super Bowl, so I invited her over for some football and chicken wings. This was actually my first time cooking chicken wings and I think they turned out fairly good for a first time out!
I knew I wanted to make chicken with a standard hot sauce, but then I also wanted to try something a bit different. Something sweet and hot. I decided to play around a bit with food I already had and food I knew I liked. The result ended with a trio of sauces:
Hot Sauce, Mango Jalapeno, and Lingonberry Chipotle
The hot sauce chicken wings were the best of the bunch. They were the only ones floured before frying. It was a nice heat, more medium than hot, but the heat can always be adjusted.
The mango jalapeno sauce was sweet and you could barely taste the jalapeno. Definitly the mildest of the bunch. In the future, I would find a way to carmalize it. Erin thought it needed more salt.
The lingonberry chipotle was hot and sweet, a great combination! If you have trouble finding lingonberry jam, feel free to substitute rasberry jam or a similar fruit. You can get lingonberry jam at IKEA!

Chicken Wings Trio - The Hot Wings
Ingredients:
5 - 6 lbs Chicken Wings total (divide them among the sauces, we made about 9 wings per sauce)
2 cups Canola Oil
Directions for Chicken Wings (for Hot Sauce Wings):
- Coat chicken wings with flour mixture and refrigerate for 1 hour.
- Preheat 2 cups of oil in a heavy skillet to 375 degree F.
- Coat chicken wings a second time and fry at 375 degrees F for about 13 minutes, turning 2 or 3 times.
- Remove from oil and dry on wire rack.
- Toss in hot sauce and plate wings.
The Breading:
Ingredients:
- 1 cup all-purpose flour
- 1 tsp. salt
- 1/2 tsp. paprika
- 1/2 tsp. cayenne pepper
- 1/2 tsp. garlic powder
- 1/4 tsp. black pepper
Directions:
Combine all ingredients in a shallow dish.
The Sauce:
In a sauce pan, mix 1/2 cup butter and 1/2 cup Frank’s Hot Sauce until Butter is melted. Turn on low until ready to toss with wings. If you want a hotter sauce (or milder) just change the butter to hot sauce ratio.
