Since this is the husbands last day in the USA, he made a request for pancakes. I will admit that I am not the best pancake maker in the world. No matter what recipes I use, they always end up, well… less than perfect.

Banana Walnut Pancakes

The recipe I started with:

Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 1/4 cup shortening, melted

The Steps:

  1. In a small bowl, combine the flour, sugar, baking powder and salt. Combine the egg, milk and shortening; stir into dry ingredients just until moistened.
  2. Pour batter by 1/4 cupful onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown.

However, I can never leave good enough alone. So after making 6 pancakes (since the husband only wanted the unfooled around with version) I added some additional ingredients:

Extras:

  • 1/2 banana, mashed with a fork
  • 1/2 tsp. coconut extract
  • 2 Tbsp. chopped walnuts

After adding them to the mixture, I continued cooking as normal.  The results reminded me of fried banana bread. I topped with the other half of the banana, and didn’t need to add syrup!
