I pretty much never cook beef. I have no problem with beef, I just like other meats more. Sadly, my husband suffers from the lack of beef, so I told him I would whip up something special for him this week before he left on a business trip. Ironically, the business trip will take him to Brazil, where he will have beef almost every meal! Never the less, I had him flip through some magazines I had lying around so he could find something he liked. He ended up with Beef Bruschetta Skillet from a Kraft Foods mailer. I altered it a bit, but left in the Velveeta. I also happen to be no fan of processed cheese, so in the future I will probably used some sharp cheddar.

Cheesy Steak and Rice
Ingredients:
- 1 lb. beef sirloin steak, cut into thin strips
- 2 tsp. vegetable oil
- 4 cloves of garlic, minced
- 4 Roma tomatoes, chopped
- 10 oz. beef broth
- 1 tsp. dried basil
- 1 1/2 cups instant white rice, uncooked
- 5 oz. Velveeta, cubed ( about a 1 1/4 cups)
The Steps:
- Heat oil in a skillet and brown steak over medium-high heat. Remove and set aside.
- Add garlic, tomatoes, beef broth, and basil to skillet and bring to a boil.
- Stir in rice and return to a boil.
- Reduce heat to medium-low and add Velveeta and steak. Cover.
- Simmer 8 to 10 minutes, then stir until Velveeta is completely melted and everthing is blended together.

[...] The night ended with some tasty Dreyer’s - American Idol Ice Cream - Take the Cake. It is a creamy yellow cake-flavored ice cream with a swirl of blue icing and multi-colored sprinkles. Pretty tasty! It is the “Slow Churn” variety of Dreyer’s, so it is lower in fat and calories than other ice cream. It really comes out creamier and softer than other packed store bought ice cream. I felt like the yellow cake flavor fades after a few bites and all you can taste after that is sugar in the form of the sprinkles. If you like sugar, it would be a good choice for you. I, however, am a salty person, not a sweet person. I have just been dishing out a bowl for the Husband and sneak bites off of him. I really just wanted more of the Cheesy Steak and Rice dish that I made tonight. [...]
