Lucy is the name of the sandwich I had today for lunch at The Tomato Head in Maryville. I have always enjoyed every meal I’ve had at The Tomato Head. The food always tastes fresh. It tastes like someone cares. Lucy is especially delicious. It is a vegetarian sandwich with hummus, portobello mushrooms, red onions, carrots, spinach and walnuts. I always get the small, as it ends up being the perfect size for lunch. Just right! I also choose the homemade wheat bread (you could have white if you prefer). Kettle chips and a pickle on the side completes the meal. Mmmmm… I’m ready for another one!
