Trout Meuniere and Garlic Butter Green Beans

Back again with another recipe. This fish recipe is from a new book that I bought over Halloween: Delicious Disney. I had to have it because it includes an infamous (among our family) Cheddar Cheese Soup. I have yet to try making that one, but I did give this Trout Meuniere a try. I actually used halibut instead of trout and it turned out just fine. I also had way too much lemon juice from my big ol’ lemon, so remember that less is more here!

As far as the green beans are concerned. I just threw this stuff together based on having the extra shallots from the pecan sauce and then some remaining garlic cloves. That, and who doesn’t love butter?!?

Halibut and Green Beans

Trout Meuniere with Pan-Roasted Pecan Sauce

The Ingredients:
• 1 cup of flour
• 3/4 tablespoon salt
• 1/4 tablespoon pepper
• Pinch cayenne pepper
• 1/4 cup clarified butter, divided (Slowly melt butter and skim off milk solids. The remaining is clarified butter)
• 4 8-ounce trout fillets
• 1 cup milk
• 1 tablespoon minced shallots
• 3/4 cup chopped pecans
• 1/4 cup white wine
• Juice of 1 lemon
• 3 tablespoons of unsalted butter
• 1 tablespoon chopped parsley

The Steps:
1. Combine flour, salt, pepper and cayenne and set aside.
2. In a skillet over medium-high heat, add the clarified butter, reserving one tablespoon for sauce.
3. Dredge the fish in the milk and then the flour mix and add to the skillet, cooking about 2 – 3 minutes on each side or until golden brown. Remove to plate and keep warm.
4. Wipe out skillet then add the remaining 1 tablespoon of clarified butter and shallots, sautéing for 10 seconds. Add the chopped pecans and sauté for about 1 minute. Add a pinch of flour and whisk in the white wine and lemon juice for about 30 seconds until shiny.
5. Remove from heat and whisk in the 3 tablespoons of unsalted butter and parsley until butter is melted. Add salt and pepper to taste and spoon over fish. Serve immediately.

Garlic Butter Green Beans

The Ingredients
• Fresh green beans, about 1 pound
• 4 cloves of garlic, thinly sliced
• 1 teaspoon minced shallots
• 2 tablespoons unsalted butter, divided
• 2 tablespoons olive oil

The Steps:
1. In a skillet, add 1 tablespoon of butter, the olive oil, garlic and shallots and cook on medium heat until the garlic starts to brown.
2. While the garlic is cooking, steam the green beans by your preferred method (bag in microwave, steamer on stovetop, etc.) until crisp-tender
3. Add the green beans to the garlic butter mixture and add the remaining tablespoon of butter. Toss over low heat for about 2 minutes. Serve while still warm.
