After a LONG day of interviewing for potential summer jobs, I came home to relax. How did I choose to do such relaxing? By getting in my (tiny) kitchen and cooking up some food.
I guess I should preface this recipes with the admission that I am addicted to food blogs (shhh!). I love to read about what other people cook and get ideas and see their pictures and take pictures of my own and eat and eat and eat! So I have been going through blogs that I read and reading blogs from their blogroll and then reading blogs from their blogroll and it can go on and on. Sure, some blogs show up on everyone’s blog roll. But you can always find a new food blog! And I am sure more are popping up every day. I am only somewhat picky when it comes to adding blogs to my RSS reader (and then more picky about what goes into my blog roll). You have to post at least once a week to go into my reader (and if it is only once a week, then they better be good). I have to have been reading you for a while to get into my blogroll.
So today I fell upon C for Cooking. I scrolled down, looking through the discussions of food and found something really cool. I thought to myself: “Hey Ashley. You have all those ingredients, so why not give it a try AND get a serving of fruit in!” So I did. And of course I can never leave a recipes the way I found it, so here is the recipe -ashleystravel style!

Tropical Fruit Wontons
Ingredients:
- 1 ripe mango, cut into 1″ (or smaller) cubes
- 2 ripe banans, cut into 1″ (or smaller) cubes
- 2 Tbsp. sweetened shredded coconut
- Wonton wrappers (I used about 16 or so)
- Oil for frying
- Cinnamon for dusting
- Powdered (confectioner’s) sugar for dusting
The Steps:
- In a bowl, combine mango, banana and coconut.
- Scoop about a teaspoon full of the mixture into each wonton, fold in half and seal with warm water.
- Fry in yout fryer (they cook up VERY fast, so don’t take your eyes off of them!)
- Dry on a paper towel and dust with cinnamon and powdered sugar.
- Eat while still warm!
